This recipe makes a delightful mixed berry cobbler with a sweet berry base and a tender, golden topping.

- 6 cups mixed berries (fresh or frozen)
- 1/2 cup granulated sugar (plus 2 tablespoons for topping)
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine mixed berries, 1/2 cup sugar, cornstarch, and lemon juice. Toss to coat.
- Pour berry mixture into an 8×8 inch baking dish.
- In a separate bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
- Add milk and melted butter to the dry ingredients, stirring until just combined. Do not overmix.
- Spoon dollops of the topping mixture over the berries.
- Sprinkle the remaining 2 tablespoons of sugar over the topping.
- Bake for 30-35 minutes, or until the topping is golden brown and the berries are bubbling.
- Let cool slightly before serving.
Notes
- Use any combination of berries you prefer.
- Serve warm with a scoop of vanilla ice cream.
